Glenn- Yep, it's a "reverse-sear" technique, and I like the results better than the more traditional sear, then low heat roast. It works especially well on thick steaks and is wonderful on standing rib roasts. I do the Xmas roast this way every year, and I get the same doneness throughout ...

One of my favorites is an Arturo Fuente Hemmingway Masterpiece (9", 42 or 44 ring size, I think), in a Maduro wrapper (this one is somewhat rare.) Takes quite a while to finish.....

Thanks for the note, Andy. As it turned out, my wife wanted some port last night, so I popped/poured a 1995 Smith Woodhouse LBV. I didn't focus on it enough for notes, but did enjoy it very much. There is more in the decanter for this evening, so the Warre's will have to wait.

I was doing some updating work in Cellar Tracker last night, and as it turns out, I DO have one bottle of this VP.... One of the downsides of CT, it's harder to "forget" about stuff that needs a long sleep! ;)
