How long does a basic sherry last once opened?

I think finos are best when opened. No sense in holding them. Half bottles, if you can get them are best. Freshness is everything. Olosoros, on the other hand, can last like a real tawny port.

Good advice from Eric there Andy. I would also advise looking to see if there is a bottling date and choose the youngest. I am a confirmed addict of bottles with age in most wines but I have on two occasions had a fino (the Tio Pepe from Gonzales Byass and La Gitana from Hildago) in Jerez and tried it a couple of days later in the UK. Even to my uneducated palate the wine in Spain was so much fresher and to my taste better. Olorosos do keep but I am not sure re the Amontillado's or palo Cortado's - maybe someone out there will enlighten us. Best as Eric says to buy half bottles and toss the cork away!

Paul.
