Jack Nicholson
His performances in one Flew Over The Cookoo's Nest, The Shining, As Good as it Gets and A Few Good Men were simply outstanding.
What separates Jack out for me is that his characters are so believable, regardless of how outrageous and unusual they are.

Harrison Ford, I guess. He's been on far too many movies that I really like to be coincidence.

Actor is a toss up between olden films: Marlon Brando and current: Robert DeNiro
Actress would be past: Greta Garbo and in modern times: Charlize Theron

Hmm... I'm not sure I could pick one but I currently have an obsession with Scarlett Johansson. The W Magazine photo shoot she did with Natalie Portman was HOT!

Jack Nicholson...for so many outstanding roles...in fact always brilliant irrespective of the film/type of film and getting better with age, just as a Great Vintage Port does.
Meryl Streep also in so many outstanding roles across a wide spectrum of types. Another that, like a Great Port, has aged extremely well.

Bogie.
Not a great actor, but a good one and perfect in the roles he did. They are some of my favorites of all time.
