Grilled white almonds

A tipycal munchies in the Douro is to grill some almonds and eat them with a glass of white port. A simple but tasty recipe is to grill them with Douro Olive oil and salt flower until they become mild brown. Let them cool on a sponge paper to absorb the excess of oil. Then put them back in the container and add some more flower salt until it fits your taste. The final touch is to add a small quantity of white truffle flavoured oil to add that magic taste of this ingredient.
Enjoy with a glass of white/tawny port or with some savoury white wine too. Don't put too much truffle falvour as it can overpowered many wine, but just enough to scent it all over the place as it is the most powerful aromatic ingredient you can probably find!
