Knowing that some friends were bringing a chocolate dessert for our little dinner, I asked our resident Port expert, Roy Hersh, how to best show my wine of choice: 1995 Warre's Quinta da Cavadinha.
Like a good schoolboy, I followed his instructions, decanting the wine about 6 hours before I anticipated drinking it. I also tasted it when I first poured it, and it was young, with lots of violet and purple fruits, and tons and tons of VA, just a wildly violent wine to drink. After its slumber period in the decanter, this Port showed much better and more balanced, with nicely sweet dark berries, plums, flowers and minerals and a long, VA-tinted finish that went on and on and cut right through the rather sweet cake my friends had brought.
