Several of us at a local restaurant buy bottles of port and leave them behind the bar for any of us that wish to sample them. This is one of my recent bottles. This port was clearly a vintage port, with still a notable fruit tone. The cork was wet and crumbly and disintegrated while being drawn, so we filtered it and returned it to a rinsed bottle. The end of the cork closest to the wine looked like polished mahogany. A bit of dark, tart current overlaid the rich mouth-filling feel of a well-aged port. I want to try this with a strong gorgonzola.
