Sunday's are pretty slow in the morning so no worries about getting a early start. Though walking around when it's still a cool brisk morning is a great time to see things without all the normal traffic and before the sun gets warm. Of course, from where you are from in Florida it will probably feel chilly
Most of the river front lodges will be open at some point so you've got plenty of opportunities to visit Lodges and taste Ports and wines. The Graham's Lodge (which has a restaurant for lunch), so does the Yeatman Hotel. Both of which are amazing places to eat and drink.
You can take the tram up to the old fort and walk around, which gives good views of the lodges and you can see other areas slightly off the normal tourist track. Then walk back down hill to the riverfront after.

In addition to the Graham's lodge, the Ramos Pinto lodge tour includes their old HQ building which is now a museum. It's worth the tour for that alone, but stop by to get the afternoon's language schedule (or request your own) before you actually want to take the tour. The tours are conducted in whatever language has been requested on a first-come first-served basis, and they'll set up a schedule if there's sufficient demand.

Don't plan too much ahead. One of the joys of a first visit is just taking photos, taking it all in and smelling the coffee or in this case, Port. You can follow leads to specific places, but lots of lodges do allow walk-in guests and there are loads of places to eat until about 7 p.m. when you will see it far less easy to find good eateries open on a Sunday night. Have a great time, Jeff!
