Which Madeiras would you pair with various cuts of beef? I've done some quick reading and it appears that Sercial or Bual goes best with steak, especially skirt steak.

Agreed. Sercial or Terrantez would be good options. I'd want to stay on the drier side of the Madeira options.

Madeira is already pretty dry to me, so I'd go with Terrantez or Boal. Sercial or Verdelho would be too dry for my taste. Even Malvasia would work for me, especially a Barbeito since they tend to be drier than D'Oliveiras.

I tried RWC Charleston Sercial last night with steak and while the wine made a good sauce, something was missing on the drinking front. A bit too dry and tangy. I'm thinking Bual or Terrantez might be best for me, and if those are too rich, I can try Verdelho.
The journey is half the fun

For me, Sercial is a fresh seafood drink.
